What is Shade Grown Coffee?
In the coffee industry, the term "shade grown" has attracted a lot of recent attention. The variety of interpretations ranging from having one canopy tree in the middle of an enormous plantation to having all coffee plants under a multi-layered canopy of indigenous trees. The main ecological interest in sustaining a canopy is to provide bird and animal habitat that is only found in coffee-growing regions of the world.

Café Amanecer: Multi-level canopy under indigenous trees
Why Drink Shade Grown Coffee?
While many industry leaders promote shade grown coffee for the bird and animal habitat, we grow our coffee in the shade not only for ecological reasons, but because it produces the premium quality in taste that our clients demand. Coffee grown in the shade without chemical fertilizers provides us a very slow-developing cherry and low yield. The results are as follows:
20% less than a sun grown harvest
Slow cherry maturation produces developed taste characteristics
